Tagine Spice Blend 1/2 cup, yields 10 lbs.
A secret blend of all natural spices. In a pot, for each lb of either
chicken, beef or lamb, use 1 tablespoon for either chicken, beef or lamb,
add 1 tablespoon finely diced garlic, 1 large chopped yellow onion, cover
with cold water, mix, and cook over medium heat with lid on. Check
regularly until meat is tender. Add cooked vegetables or caramelized
prunes and apricots 15 minutes before turning the heat off.

Considered by many to be the biggest contribution of morocco to the
culinary world. Made with all natural California lemons, our version is
preserved for a minimum of 8 weeks, has a firm texture and is lighter in
sodium. Finely slice or chop this moroccan specialty and add to any salad,
marinade, stew, or use as a garnish to enhance any dish. Use no more than
a quarter lemon for serving up to 3 people. Great in sandwiches.
